Sometimes you have to be creative with the ingredients in your fridge when you haven’t gotten time to go grocery shopping. For some reason I always have eggs when food is limited in my house so frittatas are a quick, easy solution. I added salmon and olives in this one. A weird combination but it actually tasted pretty good. I garnished it with a dollop of salsa and served it with a garlic brown rice and quinoa mix (it’s microwaveable and found at Costco).
