One of my favorite Italian restaurants back home is Cafe Pesto at Kawaihae on the Big Island. Its a pasta/pizza place that infuses local ingredients and flavors into Italian cooking. One of their popular dishes is chicken apple sausage severed over pesto linguine. The kick is that they put a spoonful of marinara sauce on the noodles.
I tried to replicate this dish for a dinner party a couple of weeks ago. I grilled some chicken apple sausages from Trader Joe’s and served it over pesto linguine and a dollop of marinara sauce. I also took some mini french baguettes and sprinkled olive oil, herbs de provence, and garlic powder. An easy way to make garlic bread. Everyone at the dinner party enjoyed it!
